Jicama Goat Cheese Salad

You might be asking yourself, " Seriously a pedestal?"  Yes my friend. It's that good. It deserves to be on a pedestal! Enjoy!

Jicama Goat Cheese Salad


9 cups greens (I use a mix of iceberg, kale and spinach or spring mix)

1 medium jicama

1 orange pepper

1 1/2 cups black grapes

1/2 log of rasberry of cranberry goat cheese (Costco is the best for this!)

1 cup pecans

1/4 sugar

2 Tbl water

First make your candied pecans so they can cool down. Add pecans, sugar and water to a frying pan. Heat and stir until sugar dissolves. When the pecans look glossy remove from heat and continue to stir often until they are cool. This prevents them from sticking together.

Wash dry and chop your greens. Be sure they are dry. Wet salads are not your friend!  Julienne the jicama and orange pepper. Slice grapes. Crumble the cheese.

Add all the ingredients together and serve with balsamic vinegar and olive oil.
