Tex Mex WOW Bowl


1 cup dry quinoa

1 1/2 tea cumin


2 cups precooked black beans

4 poblano peppers

2 tea chili powder


4 1/2 cups cabbage

1/2 cup red onion

1/4 cup rice vinegar

1/4 cup red wine vinegar 

2 Tbl olive oil

Salt & pepper to taste



Sharp cheddar cheese or Monterey jack 



First Layer:

Cook quinoa according to package instructions excepts add the cumin at the beginning of the cooking process.

Second Layer:

Chop peppers and saute’ in a little olive oil. Add black beans and depending on your level of desired heat and the heat of your peppers add chili powder.

Third Layer:

Thinly chop cabbage and finely dice onion.  Mix together in a bowl with the vinegars and oil. Season with salt and pepper.

Layer the quinoa, cheese, beans & peppers and top with the cabbage mixture.  Serve with salsa as well, if desired.  Yummo!
