Red Pepper & Mango Quinoa

Recipe adapted from Our Best Bites

4 cups chilled cooked quinoa (about 1 1/3 dry quinoa)

1.5 cups black beans (1/2c dry or 1 14 oz can)

3 clamshell mangos -chopped

2 red peppers – chopped

6 green onions - chopped

1 cup cilantro - chopped

 ½ cup red wine vinegar

3 Tbs olive oil

2 Tbs fresh lime juice and zest

Kosher salt and white pepper to taste

 

Add all ingredients to bowl and toss.  Add salt and pepper to taste!
