I am not extremely fond of sweet salads. This one has just enough sweet while still tangy. There is no sugar in the dressing only honey to add a little sweet but not overkill. It is such a fantastic blend of flavor, tangy & sweet!
ALSO a tip on how to deseed a pomegranate here! So wish I could have taught my Grandma this trick!
10 cups greens; any combo of spring mix, kale, spinach, iceberg or romaine.
1 pomegranate seeded
1 cup dried blueberries
2 cucumbers, chopped
1 cup feta cheese
1 cup sliced almonds
Ingredients for the vinaigrette:
1 cup grapes
½ cup red wine vinegar
¼ cup olive oil
½ cup honey
1 garlic clove
2 green onions
1 tea salt
Wash, dry and chop greens. Making sure your greens are dry is very important for a nice crisp salad. Place greens in a serving dish and add the rest of the ingredients.
Place all the ingredients for the vinaigrette into blender and blend until smooth.
