What a fantastic blend of flavors! Each layer is flavored just a little different. With garlic, cinnamon, salty and sweet all in one dish. I am so happy to have finally found a sweet potato recipe that to me, is perfection! This is an absolute must at our house on Thanksgiving. I promise you will not be disappointed!
3 lbs orange sweet potato
1½ Tbl cinnamon
1½ tea nutmeg
3 lbs white sweet potato
4 cloves garlc, minced
1½ c heavy cream
6 Tbl butter
4 egg whites
13 oz marshmallow creme
Orange Sweet Potato
Peel and chop orange sweet potato, place in a large pot and cover with water. Add cinnamon and nutmeg. Bring to a boil and simmer until tender.
White Sweet Potato
Peel and chop white sweet potato, place in a large pot and cover with water. Mince garlic and add to the potatoes. Bring to a boil and simmer until tender.
While potatoes are boiling use an electric mixer to beat egg whites. Add in 1Tbl at a time of sugar until stiff glossy peaks form, meaning you can put a spoon into the mix and when you pull it out a beautiful white peak is left standing.
Drain water from both pots and whip potatoes with ¾ c cream and 3 Tbl butter, separately. Season potatoes to taste. You can use just salt or you can add garlic salt to the white potatoes and cinnamon to the orange. Just play with the flavor.
Layer Potatoes in a 15 X 10?? glass pan. With a rubber spatula, fold marshmallow crème into egg white mixture. Then add to the top of the potatoes.
Place in an oven heated to 400º. Heat until potatoes are warm and meringue turns golden brown.
