Artichoke Feta Salad


Greens, spring mix or romaine

2 cups grape tomatoes, sliced in half

1½ cups artichoke hearts

2 avocados, cubed

2 cups diced jicama

1 can Lindsay olives, sliced

1 cup feta


Wash, dry and chop greens.  Add the rest of the ingredients and toss.  Serve with balsalmic vinegar, olive oil, salt and pepper.

Just a couple tips...

  • I like to use Lindsay olives.  They are miles better than regular canned black olives, so much so that regular olives kind of gross me out now.  Promise it is worth trying them. I buy mine at Costco, but if you can't find them there, you can click the link below to get them on amazon.
  • You can buy artichoke hearts in liquid, not in oil!  They both taste good but the ones in liquid keep the salad very fresh tasting, i like them better.  I use the Trader Joes or Costco brand
